My parents did a huge island when they redid their kitchen. It is amazingly useful. I highly recommend it. So much nice work space while cooking.
Sadly can’t find a picture that shows the island, but here have a picture of the kitchen on their van:

I guess if you really think about it, drywall is awful environmentally, paint gives off VOCs (wonder what kind of VOCs OSB/ply give off), and given the right environment, concrete can be OK, durable, won’t catch fire, though in some climates, concrete sweats real bad.
I’m a big fan of framing out a portion of a steel building, like a 60x80 or similar size. I get my giant workshop, and I have my living area that can be better air conditioned.

Our house has about an 8-foot bar and I really like it. We don’t have enough room for an island but they are really nice if you can put one in and it doesn’t mess up the flow of the room.
